Codfish with Oysters Recipe:
1. Cook the oysters in their own liquor over low heat until the edges begin to curl
2. Drain the oysters and reserve the liquor
3. Wash the codfish steaks in cold water then place them into a well-buttered casserole dish
4. Spread the steaks with the chopped onion
5. Pour the dry white wine and the oyster liquor over the steaks
6. Bake the fish in a moderate oven of 350F (177C) for about 15minutes or until the fish flakes easily with a fork
7. Transfer the steaks to a heated serving dish and keep them warm
8. Melt the 3 tablespoons of butter in a saucepan
9. Blend in the tablespoons of flour
10. Add the stock from the casserole while stirring constantly
11. Season with salt and pepper to taste
12. Cook the sauce until it is thick and smooth
13. Add the cooked oysters and heat them thoroughly
14. Pour the sauce over the steaks and sprinkle them with the finely chopped parsley and lemon juice
