Barbecued Broilers.
- Select 3 plump broilers.
- Remove the backbones.
- Neck with a sharp knife so that the halves will lie flat on the grill.
- Place the chicken halves in a shallow pan.
- Sprinkle them with salt.
- Make a marinade with 1 cup olive oil, 1/2 cup white wine, 1 cut clove of garlic and 6 crushed peppercorns.
- Marinade the chickens for 30 minutes.
- Place the chicken, skin down on the grill about 5 inches from the coals.
- Broil for 25 to 30 minutes.
- Turn the halves frequently to cook them evenly.
- Baste often with marinade.
- Melt 1/4 pound butter in a saucepan.
- Add 6 shallots, finely chopped, 1 tablespoon each of chopped chives and chervil or parsley.
- Also add 1 teaspoon chopped sweet basil.
- Bring the butter to a boil.
- Pour it while foaming, over the chicken.
