Cheddar Soup Recipe:
1. Melt the butter in the top of a double boiler
2. Stir in the flour
3. Gradually stir in the the cups of hot milk
4. Add the garlic clove and cook the mixture over boiling water for about 20minutes
5. Discard the garlic
6. Stir in the dry white wine, the grated cheddar cheese, salt, pepper and the nutmeg
7. Gently cook the mixture until the cheese is melted
8. In a separate bowl, lightly beat the egg yolks and the heavy cream
9. Gradually stir the egg mixture into the soup and cook for about 3minutes longer while continually stirring
10. Sprinkle the soup with a little grated cheddar and serve hot

A pinch of nutmeg
2 egg yolks
2 tablespoons heavy cream
A little grated cheddar cheese (garnish)
