Flageolet Bean Salad Recipe:
1. Put the beans in a large bowl
2. Cover them with cold water and soak them overnight
3. Drain them
4. Put the beans in a saucepan together with salt and the bouquets garnis
5. Cover them with fresh cold water
6. Bring the pan to the boil
7. Cover the pan with a lid and simmer gently for about 1 and 1/2hours or until tender
8. Drain the beans thoroughly and stir in the mayonnaise, parsley and onion while they are still warm
9. Leave the beans to cool
10. Turn the bean salad into a serving dish and garnish with the sprigs of parsley

Salt
2 bouquets garnis
4 level tablespoons chopped parsley
1 medium onion, finely chopped
1 lb (450g) flageolet beans
1/2 pint (285ml) mayonnaise
Small sprigs of parsley (garnish)
