Salmon Croquettes Recipe:
1. Melt the butter over low heat in a saucepan
2. Stir in the flour
3. Gradually add in the milk
4. Cook the sauce while constantly stirring until it is smooth and thick
5. Add the salmon, parsley, onion, salt and cayenne to taste
6. Cook the mixture over low heat for 10minutes while stirring occasionally
7. Lightly beat 1 egg and the heavy cream together and add it to the croquette mixture
8. Cook the mixture while stirring for another minute
9. Remove the pan from the heat and add the lemon juice
10. Cool the mixture in a buttered shallow dish and shape it into croquettes
11. Roll the croquettes in breadcrumbs
12. Lightly beat the second egg in 2 tablespoons of water
13. Roll the croquettes in the lightly beaten egg then again in the breadcrumbs
14. Fry the croquettes in hot oil at a temperature of 385F (196C) until they are browned

3 tablespoons butter

1 cup hot milk
2 cups cooked salmon, minced
1 tablespoon chopped parsley
1 tablespoon chopped onion
1 tablespoon salt and cayenne
2 eggs
2 tablespoons heavy cream
1 teaspoon lemon juice
2 tablespoons water
Fine bread crumbs
Oil for frying
