Fried Salmon Sandwiches Recipe:

1. Using a scone cutter, cut 16 circles from the bread

2. Butter each circle

3. Drain the salmon and remove any skin and bone

4. In a mixing bowl, mash the salmon flesh with a fork

5. Stir in the cream cheese and the grated cheese

6. Season with salt and pepper

7. Spread the mixture thickly on half the bread circles

8. Top with remaining slices and sandwich firmly together

9. Beat the egg and milk together

10. Season with salt, pepper and paprika

11. Dip the sandwiches in the beaten egg mixture and fry them in hot oil until crisp and golden

12. Drain on crumpled kitchen absorbent paper and serve immediately

1 tablespoon milk
Paprika
Salt and black pepper
1 egg
16 slices white bread
2 oz cream cheese
2 oz unsalted butter
1 level tablespoon grated cheddar cheese
7 and 1/2 oz tin red salmon
Oil for frying
