Haddock and Prawns in Cheese Sauce Recipe:
1. Wash then dry the fillets on absorbent paper
2. Lightly coat each fillet with seasoned flour
3. Grease an ovenproof dish using half the butter
4. Arrange the fillets in the dish, in a single layer
5. Melt the remaining butter in a pan
6. Stir the flour in the butter and cook for a few minutes
7. Gradually add in the milk to make a white sauce
8. Melt the cheese and blend it into the sauce
9. Add the onion to the sauce
10. Chop the prawns roughly and add them to the sauce
11. Season with salt and pepper
12. Stir in the cream
13. Pour the sauce over the fish and bake in the center of the oven for 30minutes
14. If the fish is not brown on top then put it under a hot grill for a few minutes
15. Serve immediately
List of ingredients required:
12 peeled prawns
1 small onion, peeled and finely chopped
Salt and Cayenne pepper
3 fluid oz double cream
4 haddock fillets (approximately 6 oz each)
2 oz cheddar cheese
Seasoned flour
1/2 pint milk
2 oz butter
1 oz plain flour
The oven should be preheated at a temperature of 400F (200C)
