Pasta Salad with Broad Beans

Pasta Salad with Broad Beans Recipe:

1. Shell the broad beans and remove the pale green skins from each bean

2. Cook the beans in very little salted boiling water for about 2minutes

3. Drain the beans

4. Bring to the boil a large pan of lightly salted water

5. Add the pasta to the pan and cook uncovered for about 5 to 10minutes until the pasta is tender

6. Drain the pasta well and toss it in a large bowl with the vinaigrette

7. Add the broad beans and the chives to the bowl

8. Mix the ingredients lightly together

9. Cover the bowl and leave it to cool

10. Garnish with a few chives before serving

1 lb (450g) pasta shapes
8 lb (3.6kg) broad beans in their pods or 1 lb (450g) frozen beans
225ml vinaigrette
4 level tablespoons chopped chives
Chives (garnish)
