Lettuce and Celery Salad Recipe:

1. Strip the outer leaves off the lettuce

2. Cut each lettuce into 4 parts

3. Trim the roots and coarse leaves from the celery

4. Scrub and chop the sticks coarsely

5. Place the lettuce and the celery sticks in a serving bowl
To make the dressing:

1. Blend the mustard, salt and sugar in a mixing bowl

2. Stir in the cream

3. Beat in the olive oil, drop by drop

4. When all the oil is absorbed, gradually beat in the vinegar until the dressing has the consistency of thick cream

5. Pour the dressing over the celery and lettuce

6. Toss the salad and serve garnished with a few celery leaves

4 celery sticks
4 lettuce

For the dressing:

3 tablespoons tarragon vinegar
1/4 pint olive oil
1/2 level teaspoon salt
1 level teaspoon mustard
1 level teaspoon caster sugar
1/4 pint single cream
Celery leaves (garnish)
