Minced Collops

Minced Collops Recipe:

1. Peel and finely chop the onions

2. Melt the dripping in a heavy-based saucepan and fry the onions for about 5minutes until they are soft

3. Add the minced beef, cover the pan and continue frying until the beef has browned and separated into grains

4. Season to taste with salt and freshly ground pepper

5. Pour over the water or the stock until the meat is almost covered

6. Cover the pan and let it simmer for a about 45minutes while stirring occasionally

7. When the meat is cooked, the liquid should have almost evaporated

8. Poach the eggs in simmering salted water until just set

9. Spoon the meat onto the slices of hot toast and top each portion with a poached egg

10. Minced collops could also be served with creamed potatoes instead of toast

1 lb minced beef
4 eggs
1/2 pint water or beef stock
2 onions
1 oz dripping
