Prune Parfait Recipe:

1. Boil the sugar in the water for 5minutes

2. Beat the egg yolks until they are fluffy

3. Gradually add the syrup to the eggs while constantly beating

4. Cook the cream over hot water while constantly stirring until it thickens

5. Remove from the heat and beat the mixture until it is cool

6. Stir the cup of prune puree and the brandy into the cooled cream

7. Fold in the cups of heavy cream

8. Freeze the parfait without stirring

2/3 cup sugar
1/4 cup water
6 egg yolks
1 cup prune puree
2 cups heavy whipped cream
2 tablespoons brandy
