Prawns and Mushroom Salad Recipe:

1. Wipe and trim the mushrooms

2. Thinly slice the mushrooms into a shallow salad dish

3. Mix the oil and the lemon juice together in a small bowl

4. Season with the garlic and the pepper

5. Pour the dressing over the mushrooms and turn the slices carefully so that they are well coated

6. Leave the mushrooms for about an hour in a cool place

7. Add the prawns and sprinkle lightly with the salt

8. Garnish with the chopped parsley

4 oz shelled prawns
Salt and black pepper
8 oz large mushrooms
2 tablespoons lemon juice
8 tablespoons olive oil
1 to 2 cloves peeled and crushed garlic
3 tablespoons chopped parsley (garnish)
