Ginger Cream Recipe:

1. Beat the following ingredients together until they are well blended: 1/ 4 cup of the sugar, salt and the egg yolks

2. Gradually pour the scalded milk over the egg mixture until the custard thickens

3. Remove the pan from the heat

4. Soak the gelatin in the cup of cold water for 5minutes

5. Dissolve the gelatin over boiling water and stir it into the custard

6. Add the ginger syrup, 1 teaspoon vanilla and the cup of preserved ginger

7. Stir the mixture over cracked ice until it begins to set

8. Fold in the whipped cream

9. Pour the cream into a cool and wet mold and chill it until ready to serve

10. Unmold and decorate with the whipped cream sweetened with the remaining 1/ 4 cup sugar and the remaining teaspoon of vanilla

3 tablespoons Chinese ginger syrup
1 tablespoon gelatin

2 teaspoon vanilla
