Tomato Mushroom Sauce Recipe:

1. Put the ketchup, wine and crushed garlic into a saucepan and bring it slowly to the boil

2. Simmer while uncovered for 10minutes while stirring occasionally

3. Add the mushrooms and continue simmering for a few minutes longer until the sauce has thickened and darkened in colour

4. Add salt and pepper to taste and serve hot or cold with fish

(serves 6 people)

1 to 2 cloves garlic, crushed
Salt and freshly ground pepper
1/4 pint (150ml) white wine
1/4 pint (150ml) tomato ketchup
4 oz (115g) button mushrooms, chopped
