Pecan Waffles Recipe:

1. Sieve the following ingredients into a bowl: flour, baking powder, bicarbonate of soda and salt

2. Mix the sugar in the sieved ingredients

3. Beat the following ingredients together: egg yolks, lemon juice, milk and oil

4. Add the lemon juice mixture into the dry ingredients

5. Beat the mixture until smooth

6. Beat the egg whites until they are stiff but not dry

7. Fold the eggs and the chopped pecans into the waffle batter

8. Heat the waffle iron

9. Pour in enough batter to fill the waffle iron

10. Close the lid and cook until the steaming stops (this will take about 4minutes)

11. Serve immediately with butter and maple syrup, honey or jam

1/2 teaspoon salt
1 and 1/2 oz (40g) caster sugar
8 oz (225g) plain flour
1 level teaspoon baking powder
3 eggs, separated
1 and 1/2 teaspoons lemon juice
340ml milk
3 tablespoons oil
4 oz (115g) chopped pecans
1 level teaspoon bicarbonate of soda
