Roast Young Wild Goose Recipe:

  1. Draw a wild goose and hang it for about 5 days i a cool room.
  2. Pluck and singe it.
  3. Wipe the bird inside out with a damp cloth.
  4. Stuff it with raw apple quarters.
  5. Truss the goose, tying the legs and wings close to the body.
  6. Sprinkle with salt and pepper.
  7. Roast the goose on a rack in a very hot oven (500ºF) for 30 minutes.
  8. Reduce the temperature to 300ºF.
  9. Cover the pan.
  10. Roast for 2 to 3 hours, or until the tines of a fork slip easily into the breast.
  11. Baste frequently with hot chicken stock.
  12. Pour off the excess goose fat as it accumulates.
  13. Save this fat for other use.
  14. Uncover the pan for the last 1/2 hour of roasting.
