<p>1. Wash the potatoes thoroughly with cold water<br />
2. Cook them in boiled salted water for about 10minutes until just tender</p>
<p>3. Drain the potatoes and leave them to cool then peel off the skins</p>
<p>4. Put the sugar in a frying pan over low heat and stir until the sugar has melted and has a golden caramel colour</p>
<p>5. Add the butter and stir until it is well blended with the sugar</p>
<p>6. Rinse the potatoes with cold water then add them to the caramel in the frying pan</p>
<p>7. Continue cooking over low heat while shaking the pan gently until the potatoes are evenly glazed and golden brown</p>
<p>8. Arrange the potatoes in a warm serving dish on their own or with roast meat or whole poultry</p>

<p>2 oz (50g) unsalted butter<br />
