										<content:encoded><![CDATA[<h2>Steamed Fish Recipe:</h2>
<p>1. Wash the fish thoroughly both inside and outside and pat it dry with kitchen absorbent paper</p>
<p>2. Make diagonal slashes on each side of the fish using a sharp knife</p>
<p>3. Mix 1 and 1/ 2 teaspoons of salt with pepper and the sugar</p>
<p>4. Rub the inside and outside of the fish with the salt mixture</p>
<p>5. Place about 1/ 3 of the spring onions and root ginger inside the fish</p>
<p>6. Place the fish in a steamer or fish cattle</p>
<p>7. Cover the steamer and steam the fish for 15 to 20 minutes</p>
<p>8. While the fish is cooking, boil the carrot strips for 2 minutes</p>
<p>9. Drain the carrots thoroughly</p>
<p>10. Heat the vegetable oil in a heavy-based frying pan</p>
<p>11.Add the remaining spring onions, the root ginger, green pepper and the carrot strips to the pan and stir-fry the mixture for a few minutes</p>

<p>(serves 4 people)</p>
<p>700 to 900g of whole fish, gutted and clean<br />
Salt and freshly ground pepper<br />
1/ 2 teaspoon sugar<br />
1 bunch of spring onions, trimmed and finely chopped<br />
25mm piece root ginger, peeled and thinly cut<br />
4 small carrots, peeled and cut into small matchstick strips<br />
2 tablespoons vegetable oil<br />
1 green pepper, cored, seeded and cut into thin rings<br />
2 tablespoons soya sauce<br />
2 tablespoons dry sherry<br />
1 tablespoon sesame oil</p>
