<p>1. Put a large pan of salted water on the heat</p>
<p>2. Whisk in the turmeric</p>
<p>3. Add the cardamoms and rice</p>
<p>4. Bring the pan to a boil</p>
<p>5. Cover the pan and cook gently</p>
<p>6. When the rice is tender, remove it from the heat and drain well</p>
<p>7. Put the rice in a large bowl</p>
<p>8. Mix the garam masala with the vinaigrette</p>
<p>9. Pour the mixture over the rice, mix well and leave it to cool</p>
<p>10. Remove the cardamom pods from the rice</p>
<p>11. Stir in the sunflower seeds, red peppers and cucumber and mix them well</p>
<p>12. Taste and adjust the seasoning if necessary</p>

2 level teaspoons ground turmeric<br />
3 level teaspoons garam masala<br />
2 oz (50g) sunflower seeds<br />
2 red peppers, seeded and diced<br />
1/4 pint (150ml) vinaigrette<br />
1/2 cucumber, diced<br />
Freshly ground black pepper<br />
1 lb (450g) brown rice<br />
