										<content:encoded><![CDATA[<h2>Spiced Brisket of Beef Recipe:</h2>
<p>1. Wipe the boned meat with a clean damp cloth and place it in a large bowl</p>
<p>2. Rub the meat well with salt, on all the sides</p>
<p>3. Cover the bowl with a thin cloth and leave it in the lower part of the refrigerator</p>
<p>4. Peel and finely chop the shallots and bay leaves</p>
<p>5. Put the chopped shallots and bay leaves into a bowl and add the remaining salt and the rest of the ingredients. Mix them together</p>
<p>6. Each day, rub this mixture into the salted meat and pour off any liquid that might have formed</p>
<p>(The beef should be left to steep in spices for 8days before being cooked)</p>
<p>7. After the 8days, Roll out the spiced meat neatly and tie it securely with fine string</p>
<p>8. Put the meat in a heavy-based pan and cover with warm water</p>
<p>9. Cover the pan and let it simmer over low heat for 4 to 5hours</p>
<p>10. Let the meat cool in the liquid then lift it out.</p>
<p>11. Place the meat between too plates with a heavy weight on top and leave it to press for 8 hours</p>
<p>12. Serve the spiced brisket cold and sliced</p>

<p>These ingredients allow a serving of 8 to 10 people</p>
<p>4 lb lean boned brisket of beef<br />
10 oz of kitchen salt<br />
2 shallots<br />
3 bay leaves<br />
1 level teaspoon of potassium nitrate<br />
1 level teaspoon allspice<br />
4 tablespoons brown sugar<br />
1 level teaspoon of powdered cloves<br />
1 level teaspoon of powdered mace<br />
1 level teaspoon of crushed black peppercorns<br />
1/2 level teaspoon of chopped thyme</p>
