<p>1. Trim any fat from the ribs</p>
<p>2. Heat the oil in a heavy-based saucepan</p>
<p>3. Peel and crush the garlic cloves and rub them over the ribs</p>
<p>4. Finely chop the parsley and mix it with the fennel</p>
<p>5. Rub the parsley mixture into the ribs</p>
<p>6. Put the ribs in a pan and cook on both sides until they are pale brown</p>
<p>7. Pour over the orange juice and stock</p>
<p>8. Add the marsala and correct the seasoning</p>
<p>9. Cook the spare ribs on the middle shelf of the preheated oven for 45minutes</p>
<p>10. Lift the ribs out and arrange them on a bed of noodles</p>
<p>11. Skim the fat off the juices and pour over the meat</p>
<p>12. Garnish with slices of orange and small bunches of watercress</p>
<h2>List of ingredients required:</h2>
<p>(serves 6 people)</p>
<p>6 spare rib chops of pork<br />
3 tablespoons olive oil<br />
3 tablespoons marsala wine<br />
2 heaped tablespoons parsley<br />
2 cloves garlic<br />
1 level teaspoon ground fennel<br />
Salt and black pepper<br />
1/4 pint chicken stock<br />
1/4 pint fresh orange juice<br />
Orange and watercress (garnish)<br />
The oven should be preheated at a temperature of 350F (180C)</p>
