<p>1. Fold the following ingredients into the white sauce: the skinned and flaked fish, lemon juice, parsley, green pepper, and eggs</p>
<p>2. Season the mixture with salt and pepper</p>
<p>3. Spoon the mixture into a fireproof dish</p>
<p>4. Sift the flour into a bowl</p>
<p>5. Rub the butter in the flour</p>
<p>6. Add the mustard, cheese and sufficient milk to make a soft pastry dough</p>
<p>7. Knead the dough lightly on a floured surface and roll out a circle large enough to fit the fireproof dish</p>
<p>8. Cut the pastry into 8 triangles and place them over the fish so that the points meet in the center</p>
<p>9. Brush the pastry with milk and bake in the oven for 25minutes at a temperature of 425F (220C) until golden</p>

<p>(serves 4 to 6 people)</p>
<p>Salt and black pepper<br />
1/2 lb cooked white fish<br />
1/2 lb cooked smoked haddock<br />
Juice of a lemon<br />
1/4 pint milk<br />
2 tablespoons chopped parsley<br />
1/2 small green pepper, chopped<br />
2 to 3 oz grated cheddar cheese<br />
2 hard-boiled eggs, chopped<br />
3/4 pint white sauce<br />
1 and 1/2 oz butter<br />
1 level dessertspoon dry mustard<br />
6 oz self-raising flour</p>
