<p>1. Poach the shrimps in boiling salted water for about 10minutes or until they become bright pink</p>
<p>2. Reserve a quarter of the liquid in which the shrimps were cooked</p>
<p>3. Shell and devein the shrimps and set them aside</p>
<p>4. In a large saucepan, combine the onion, shallots,celery, carrot, apple, green pepper, chili pepper, tomato and the garlic clove</p>
<p>5. Add the sprig of thyme and parsley, the bay leaf, sprigs of mint, salt and ground pepper</p>
<p>6. Add the cayenne and curry powder and the grated rind of lime</p>
<p>7. Add the reserved liquid to this mixture and bring it to the boil</p>
<p>8. In a separate bowl, add the flour and butter to make a smooth paste</p>
<p>9. Add the paste, bit by bit, to the mixture</p>
<p>10. Let the mixture simmer for about an hour</p>
<p>11. Strain the liquid into another saucepan</p>
<p>12. Add the cooked shrimps to the saucepan and let them simmer for about 10minutes</p>
<p>13. Serve immediately</p>

1 stalk celery, chopped<br />
1 carrot, chopped<br />

1 tomato, chopped<br />
1 garlic clove, minced<br />
1 sprig of thyme and parsley, chopped<br />
1 chopped bay leaf<br />
2 chopped sprigs of mint<br />
1/2 teaspoon salt<br />
Freshly ground pepper<br />
1/4 teaspoon cayenne<br />
1 tablespoon curry powder<br />
Grated rind of 1 lime<br />
2 tablespoons flour<br />
