<p>1. Melt the butter over low heat in a saucepan</p>
<p>2. Stir in the flour</p>
<p>3. Gradually add in the milk</p>
<p>4. Cook the sauce while constantly stirring until it is smooth and thick</p>
<p>5. Add the salmon, parsley, onion, salt and cayenne to taste</p>
<p>6. Cook the mixture over low heat for 10minutes while stirring occasionally</p>
<p>7. Lightly beat 1 egg and the heavy cream together and add it to the croquette mixture</p>
<p>8. Cook the mixture while stirring for another minute</p>
<p>9. Remove the pan from the heat and add the lemon juice</p>
<p>10. Cool the mixture in a buttered shallow dish and shape it into croquettes</p>
<p>11. Roll the croquettes in breadcrumbs</p>
<p>12. Lightly beat the second egg in 2 tablespoons of water</p>
<p>13. Roll the croquettes in the lightly beaten egg then again in the breadcrumbs</p>
<p>14. Fry the croquettes in hot oil at a temperature of 385F (196C) until they are browned</p>

<p>3 tablespoons butter<br />
3 tablespoons flour<br />
1 cup hot milk<br />
2 cups cooked salmon, minced<br />
1 tablespoon chopped parsley<br />
1 tablespoon chopped onion<br />
1 tablespoon salt and cayenne<br />
2 eggs<br />
2 tablespoons heavy cream<br />
1 teaspoon lemon juice<br />
2 tablespoons water<br />
Fine bread crumbs<br />
Oil for frying</p>
