<ol>
<li>Cut lamb shoulder into rather large pieces.</li>
<li>Put the meat in a saucepan.</li>
<li>Cover it with water.</li>
<li>Parboil for 5 to 6minutes.</li>
<li>Remove the lamb from the pan.</li>
<li>Discard the water.</li>
<li>Rinse the meat in fresh cold water.</li>
<li>Clean the pan and return the meat to it.</li>
<li>Add  water, onions or potatoes,  leeks,  stalks of celery.</li>
<li>Also add  garlic,  salt and peppercorns.</li>
<li>Bring the water to the boil.</li>
<li>Cook gently for 1 hour.</li>
<li>Remove the meat to another pan.</li>
<li>Skim the fat from the broth.</li>
<li>Strain the fat.</li>
<li>Rub through the sieve as much of the vegetables as possible.</li>
<li>Correct the seasoning.</li>
<li>Prepare small white onions,  small potatoes,  small white turnips and slices of carrot.</li>
<li>Put all vegetables on top of the meat.</li>
<li>Sprinkle chopped parsley.</li>
<li>Add to the strained broth.</li>
<li>Bring the broth to the boil.</li>
<li>Cook for 45 minutes or until the meat is done.</li>
<li>Add a few cooked green peas or string beans before serving.</li>
<li>Add Worcestershire sauce to the gravy for a sharper flavor.</li>

<li>1 tablespoon chopped parsley.</li>
<li>Green peas or string beans (cooked).</li>
<li>1 teaspoon Worcestershire sauce.</li>
