<p>1. Put the beef in a heavy-based pan</p>
<p>2. Stir in all the remaining ingredients</p>
<p>3. Cook the ingredients over low heat for about 1 and 1/4hours while the pan is uncovered and stir constantly until the meat is tender and the gravy is quite thick</p>
<p>4. Increase the heat and stir-fry for about 10minutes or until the oil separates from the gravy</p>
<p>5. Lower the heat and continue stir-frying until the gravy coats the meat in a dark crust</p>
<p>6. Turn the meat into a warmed serving dish and serve hot</p>

<p>(serves 4 people)</p>
<p>1 medium onion, peeled and finely chopped<br />
4 cloves garlic, peeled and crushed<br />
2 bay leaves<br />
1 and 1/2 lb (700g) rump beef, trimmed of fat and cut into 50mm squares<br />
1 level tablespoon ground turmeric<br />
450ml coconut milk<br />
25 mm piece fresh root ginger, peeled and chopped<br />
1 tablespoon sambal oelek</p>
