										<content:encoded><![CDATA[<h2>Potato with Basil Salad Recipe:</h2>
<p>1. Scrub the potatoes clean, but do not rub off the skin</p>
<p>2. Plunge the potatoes into a pan of lightly salted boiling water</p>
<p>3. Let the potatoes simmer for about 10 to 15minutes until they are just tender when pierced with a knife</p>
<p>4. Drain the potatoes well and leave them aside to cool</p>
<p>5. Finely chop the basil leaves and mix them with the yoghurt, lemon juice and the honey</p>
<p>6. Season to taste with salt and pepper</p>
<p>7. While the potatoes are still slightly warm, stir them into the basil sauce and mix them well so that they are evenly coated</p>
<p>8. Chill the dish in the refrigerator</p>
<p>9. Before serving, mix the dish well again</p>
<h2>List of ingredients required:</h2>
<p>(serves 6 people)</p>
<p>2 and 1/2 lb (1.1kg) small fresh potatoes<br />
Large handful of fresh basil leaves and 20g or 2 level tablespoons of dried basil<br />
150ml natural yoghurt<br />
1 tablespoon lemon juice<br />
1 tablespoon clear honey<br />
Salt and freshly ground black pepper</p>
