<p>1. Cook the plums together with the sugar, cinnamon and the water until the fruit is soft</p>
<p>2. Force the fruit through a fine sieve</p>
<p>3. Mix the cornstarch with a little cold water to form a paste</p>
<p>4. Return the fruit to the heat and stir in the cornstarch paste</p>
<p>5. Bring the mixture to a boil and cook it for another 5minutes</p>
<p>6. Add the dry white wine and chill the soup well</p>
<p>7. Serve in cups with a dash of whipped cream on each portion</p>

<p>1 and 1/2 lb plums, halved and seeded<br />
1/2 cup sugar<br />
1 inch stick of cinnamon<br />
2 quarts water<br />
5 tablespoons cornstarch<br />
1/2 cup dry white wine<br />
