<p>1. Peel and grate the fresh pineapple</p>
<p>2. Strain the juice from the pulp</p>
<p>3. Combine the pineapple juice and the sugar and bring the mixture to a boil</p>
<p>4. Boil the mixture vigorously for about 10 minutes</p>
<p>5. Remove the pan form the heat</p>
<p>6.Pour the syrup gradually over the 3 beaten egg yolks while constantly beating</p>
<p>7. Return the mixture to the heat and cook over low heat while stirring until the custard coats the spoon (do not let it boil)</p>
<p>8. Cool the mixture</p>
<p>9. Put the grated pineapple in a serving dish</p>
<p>10. Fold the stiffly beaten egg whites into the cooled custard and pour the custard over the pineapple</p>
<p>11. Chill and serve with a topping of whipped cream sweetened to taste</p>
