<p>1. Roast the fillet of beef in a moderate oven of 350F (177C)</p>
<p>2. Baste the beef regularly with the wine and white stock</p>
<p>3. While the meat cooks, melt the butter in a saucepan</p>
<p>4. Stir the flour in the buttered pan and cook until the mixture begins to turn golden</p>
<p>5. Add the juices from the roasted beef into the saucepan</p>
<p>6. Cook and stir the sauce until it is smooth</p>
<p>7. Add a little more stock if necessary, to make a fairly thin sauce</p>
<p>8. Add the olives and heat the mixture well</p>
<p>9. Adjust the seasoning with a little pepper and salt</p>
<p>10. Arrange the fillet on a heated platter and surround it with the olives</p>
<p>11. Pour the sauce over the meat and serve whilst hot</p>
