										<content:encoded><![CDATA[<h2>Mushrooms in Oyster Sauce Recipe:</h2>
<p>1. Soak the mushrooms in warm water for 30minutes</p>
<p>2. Drain the mushrooms and slice them into thin strips, discarding the stalks</p>
<p>3. Cut the leeks lengthwise into thin strips about 2 in (50mm) long</p>
<p>4. Heat the olive oil in a wok or a deep frying pan over high heat and stir-fry the onion for 3minutes</p>
<p>5. Add the sliced mushrooms and stir-fry for a further 2minutes</p>
<p>6. Blend the sherry with the cornflour and stir this mixture into into the pan, together with the oyster sauce, soya sauce, and salt and pepper to taste</p>
<p>7. Simmer for a further 3minutes until the mushrooms are just tender and the sauce has slightly thickened</p>
<p>8. Serve hot with rice</p>

<p>(serves 6 people)</p>
<p>14 large Chinese dried mushrooms<br />
2 medium leeks, split and cleaned<br />
3 tablespoons olive oil<br />
4 tablespoons dry sherry<br />
2 tablespoons oyster sauce<br />
1 tablespoon soya sauce<br />
1 level tablespoon cornflour<br />
1 medium onion, very thinly sliced<br />
1 clove garlic, peeled and cut into thin strips<br />
Salt and freshly ground black pepper</p>
