<p>1. Peel and finely chop the onions</p>
<p>2. Melt the dripping in a heavy-based saucepan and fry the onions for about 5minutes until they are soft</p>
<p>3. Add the minced beef, cover the pan and continue frying until the beef has browned and separated into grains</p>
<p>4. Season to taste with salt and freshly ground pepper</p>
<p>5. Pour over the water or the stock until the meat is almost covered</p>
<p>6. Cover the pan and let it simmer for a about 45minutes while stirring occasionally</p>
<p>7. When the meat is cooked, the liquid should have almost evaporated</p>
<p>8. Poach the eggs in simmering salted water until just set</p>
<p>9. Spoon the meat onto the slices of hot toast and top each portion with a poached egg</p>
<p>10. Minced collops could also be served with creamed potatoes instead of toast</p>

<p>Salt and black pepper<br />
1 lb minced beef<br />
