<p>1. Heat a 1/3 of the olive oil in a large pan</p>
<p>2. Put the tomatoes in the pan with the cut side facing down</p>
<p>3. Pierce each tomato with a fork and cook for 5minutes and then turn them over</p>
<p>4. Mix the parsley, garlic, salt and pepper together in a small bowl</p>
<p>5. Sprinkle the tomatoes with the garlic mixture</p>
<p>6. Lower the heat and cook the tomatoes until they are tender</p>
<p>7. In another pan, heat the remaining 1/3 cup of olive oil</p>
<p>8. Saute the onions in the oil until they are golden</p>
<p>9. Add the beef and stir the mixture well</p>
<p>10. Sprinkle the beef with the teaspoons of flour</p>
<p>11. Stir until the flour disappears and stir in the cups of broth</p>
<p>12. Add salt and pepper and cook for 15minutes</p>
<p>13. Put the beef in a shallow heatproof platter and arrange the tomatoes on top</p>
<p>14. Pour the cooking juices from the pan over the platter</p>
<p>15. Heat the platter for about 10minutes in a hot oven of 400F (205C)</p>

<p>6 medium tomatoes, halved<br />
2 lb freshly ground beef<br />
4 teaspoons flour<br />
1 and 1/2 cups broth<br />
Salt and pepper<br />
1 tablespoon chopped parsley<br />
1 chopped garlic clove<br />
4 chopped onions<br />
2/3 cup olive oil</p>
