<p>1. Heat the olive oil in a large frying pan</p>
<p>2. Add the onion and the garlic to the pan and fry for about 5minutes until they are soft</p>
<p>3. Add the chili powder and the sliced peppers to taste</p>
<p>4. Continue frying for about 15minutes, while stirring, until the peppers are soft</p>
<p>5. Add the tomatoes, sugar and the salt</p>
<p>6. Stir with a wooden spoon and crush the tomatoes</p>
<p>7. Simmer gently for about 40minutes while the pan is uncovered</p>
<p>8. Add more salt and pepper if necessary</p>
<p>9. Using the back of a spoon, make 4 hollows in the mixture</p>
<p>10. Crack each egg into each hollow</p>
<p>11. Cover the pan tightly with a lid and cook for 3minutes</p>
<p>12. Mix the cheddar and parmesan cheese together and sprinkle over the eggs</p>
<p>13. Cover the pan again and cook for a further 2minutes or until the eggs are cooked to your liking</p>
<p>14. Serve immediately</p>

Salt and freshly ground pepper<br />
4 large eggs<br />
4 tablespoons olive oil<br />
2 cloves peeled and crushed garlic<br />
14 oz tinned tomatoes<br />
Pinch of sugar<br />
4 tablespoons freshly grated Parmesan cheese<br />
4 oz strong grated cheddar cheese<br />
2 red peppers, cored, seeded and thinly sliced<br />
1 level teaspoon chili powder<br />
2 green peppers, cored, seeded and thinly sliced</p>
