<p>1. Peel the cucumber and dice it into 1/2 inches</p>
<p>2. Sprinkle with salt and leave it to stand for 30minutes</p>
<p>3. Cut the melon cross-ways in half and remove the seeds</p>
<p>4. Carefully scoop out the flesh in small bowls</p>
<p>5. Skin the tomatoes, cut them in half and remove the cores and seeds</p>
<p>6. Chop the tomato flesh roughly</p>
<p>7. Mix the ingredients for the dressing (add the oil last)</p>
<p>8. Rinse the cucumber in cold water and pat it dry with kitchen absorbent paper</p>
<p>9. Put the melon , tomato and cucumber in a large bowl</p>
<p>10. Pour the dressing over the melon mixture and mix well</p>
<p>11. Chill the salad in the refrigerator for at least an hour while stirring occasionally</p>
<p>12. Serve the salad in individual glass bowls and sprinkle with the mint, chives and parsley</p>

<p>1 melon<br />
Salt and black pepper<br />
6 tomatoes<br />
1 cucumber</p>
<h3>For the dressing:</h3>
<p>3 tablespoons lemon juice<br />
6 tablespoons salad oil<br />
1 to 2 level tablespoons caster sugar</p>
<h3>Garnish:</h3>
<p>1 dessertspoon each of :<br />
chopped mint<br />
chives<br />
parsley</p>
