<p>1. Turn the grill on to a medium heat</p>
<p>2. Split the langoustines in half lengthwise with a sharp knife, cutting along the underside so that when they are opened out, the prawns hinge along the back</p>
<p>3. Lay them in a shallow ovenproof dish</p>
<p>4. Mix the butter with the ginger, garlic, chopped coriander and salt and pepper to taste</p>
<p>5. Dot the langoustines with knobs of the flavoured butter</p>
<p>6. Cook in the preheated grill for about 5minutes only</p>
<p>7. Lay them on a bed of fresh coriander and serve with mayonnaise</p>

<p>(serves 4 people)</p>
<p>16 to 20 uncooked langoustines<br />
3 oz (75g) butter<br />
2 cloves garlic, crushed<br />
2 level tablespoons chopped fresh coriander leaves<br />
Salt and freshly ground black pepper<br />
1/2 in (15mm) piece of fresh root ginger, peeled and finely grated<br />
Long sprigs fresh coriander leaves</p>
