										<content:encoded><![CDATA[<p>It is your basic curried lamb recipe, very easy to make and served over buttered noodles.  The ingredients are fairly cheap and easy to acquire.</p>
<h2>Curried Lamb Recipe:</h2>
<ol>
<li>Combine 1/4 cup flour, 1 teaspoon salt and pepper is a bow.</li>
<li>Dredge meat in them mixture, coating all sides.</li>
<li>Melt butter in large sauce pan with cover.</li>
<li>Brown the meat slowly, turning frequently.</li>
<li>Remove the meat.</li>
<li>Sprinkle 2 teaspoons flour in the pan and mix until smooth.</li>
<li>Gradually add light cream, stirring vigorously over moderate heat.</li>
<li>Continue to cook until thickened, stirring constantly.</li>
<li>Gradually add lemon juice and stir well.</li>
<li>Season with the bay leaf, 1 1/4 teaspoon salt and curry powder.</li>
<li>Add the browned meat and sliced onions.</li>
<li>Cover and simmer over low heat, stirring occasionally, for about 2 to 2 1/2 hours or until tender.</li>
<li>If the gravy becomes too thick during cooking, thin out with some hot water.</li>
<li>Skim off the fat before serving.</li>
<li>Serve over buttered noodles.</li>
<li>Makes 4 servings.</li>

<li>Coat the lamb shanks with seasoned flour.</li>
<li>Melt butter in a large skillet.</li>
<li>Add the meat.</li>
<li>Brown slowly, turning frequently.</li>
<li>Remove the meat.</li>
<li>Sprinkle 2 tablespoons of the seasoned flour mixture in the skillet.</li>
<li>Mix until smooth.</li>
<li>Gradually add 1 cup of beef stock, stirring vigorously over moderate heat.</li>

<h2>Braised lamb recipe:</h2>
<ol>
<li>In a heavy skillet, brown 2 pounds diced lamb, 3 slices of minced lean bacon, and 1 chopped onion in 2 tablespoons lard or butter.</li>
<li>Sprinkle the meat with salt and pepper and 3 tablespoons flour.</li>
<li>Mix well.</li>
<li>Add 1/2 cup dry white wine and cook until the wine is reduced to half.</li>
<li>Add barely enough water to cover the meat.</li>
<li>Cover the kettle and simmer the lamb for 45 minutes or until it is tender.</li>
<li>With a fork, mix lightly 3 egg yolks with 1 tablespoon lemon juice and a little of the hot liquid in the kettle.</li>
<li>Add the yolks, 2 tablespoons chopped parsley and 1/2 teaspoon marjoram.</li>
<li>Remove the meat from the fire and stir in the egg mixture.</li>
<li>Cover the kettle and let the stew stand 5 minutes before serving.</li>
</ol>
