<p>1. Dissolve the sugar in the lemon and orange juice</p>
<p>2. Add the lemon and orange peels to the juices and bring the mixture to a boil</p>
<p>3. Boil the mixture rapidly for 5minutes</p>
<p>4. Remove the fruit peel and cool the syrup</p>
<p>5. Add the cups of champagne and the strong infusion tea to the cool syrup</p>
<p>6. Freeze the mixture</p>
<p>7. About an hour before serving, stir the Italian meringue into the punch glace</p>
<p>8. At the last moment before serving, mix in the rum, a little at a time</p>
<p>9. Serve in sherbet or punch glasses</p>

<p>3/ 4 cup sugar<br />
Juice of 2 lemons<br />
Juice of 1 orange<br />
A strip of lemon peel<br />
A strip of orange peel<br />
2 cups of champagne or dry white wine<br />
1/ 2 cup strong infusion of tea<br />
Italian meringue made with 2 egg whites<br />
