<p>1. Melt the butter in a heavy-based pan</p>
<p>2. Add the onion and the crushed garlic to the pan</p>
<p>3. Fry gently for 5minutes or until soft and lightly coloured and then set aside</p>
<p>4. Crush the coriander seeds finely with a pestle and mortar</p>
<p>5. Add to the onion and garlic and fry for about 2minutes</p>
<p>6. Add the mushrooms and increase the heat</p>
<p>7. Add salt and pepper to taste and toss to coat in the onion mixture for 3minutes</p>
<p>8. Toast the bread</p>
<p>9. Stir the soured cream into the mushrooms and heat through gently</p>
<p>10. Place a piece of toast on each of four plates and spoon the mushrooms on top</p>
<p>11. Sprinkle with chopped fresh coriander leaves and serve immediately</p>

<p>(serves 4 people)</p>
<p>8 oz (225g) mushrooms,wiped and neatly sliced<br />
1 and 1/2 oz (40g) butter<br />
1 medium peeled and finely chopped onion<br />
1 clove peeled and crushed garlic<br />
4 level teaspoons coriander seeds<br />
Salt and freshly ground pepper<br />
4 slices granary or wholemeal bread<br />
8 level tablespoons soured cream<br />
Chopped fresh corinder leaves (garnish)</p>
