<p>1. Scale, wash and clean the fish</p>
<p>2. Cut the heads off and remove the backbones</p>
<p>3. Inside each herring, sprinkle some salt and pepper</p>
<p>4. Close the fish to their original shape</p>
<p>5. Dip the fish in the milk</p>
<p>6. Coat the fish evenly and firmly with the oatmeal</p>
<p>7. Heat the butter in a frying pan</p>
<p>8. Fry the herrings over gentle heat for 10minutes on each side</p>
<p>9. Lift the fish from the pan and arrange them on individual serving dishes</p>
<p>10. Spoon a little of the butter over each herring and garnish with the lemon wedges</p>

<p>4 oz unsalted butter<br />
4 level tablespoons coarse oatmeal<br />
