<ol>
<li>Soak a country ham overnight.</li>
<li>Scrub it thoroughly under running water.</li>
<li>Cover it with cold water.</li>
<li>Bring the water to a boil.</li>
<li>Simmer the ham for 18 to 20 minutes per pound.</li>
<li>Let it cool.</li>
<li>Cut the skin away.</li>
<li>Carve the top of the ham in several thin slices.</li>
<li>Cut small uniform circles from these slices.</li>
<li>Cut matching rounds of páté de foie gras.</li>
<li>Sandwich them with rounds of ham.</li>
<li>Coat these medallions with Madeira aspic and decorate each with a small circle of truffle.</li>
<li>Arrange a small dome of cooked vegetables glazed with aspic on top of the ham.</li>
<li>Arrange an overlapping ring of ham.-and-goose-liver medallions around the vegetables.</li>
<li>Edge the ring with chopped aspic mixed with chopped truffles.</li>
<li>Coat the sides of the ham and the shank bone with aspic.</li>
<li>Decorate to taste with small cutouts of carrot and truffle.</li>
<li>Cover the end of the shank bone with a paper frill.</li>
<li>Garnish the platter with small tart shells made with puff pastry or unsweetened tart pastry.</li>

<ol>
<li>Melt 6 tablespoons butter is a saucepan.</li>
<li>Add5 tablespoons flour.</li>
<li>Cook over very low heat for 5 minutes, stirring constantly and removing the pan from the heat from time to time to prevent the flour from browning.</li>
<li>Add gradually 2 cups hot milk and 1 cup hot cream.</li>
<li>Cook, stirring until the sauce is smooth and thick.</li>
<li>Remove the pan from the heat.</li>
<li>Stir in 2 cups diced ham and 1/3 cup pimentos, cut into thin strips.</li>
<li>Add a little of the hot sauce to 3 lightly beaten egg yolks.</li>
<li>Return the mixture to the sauce.</li>
<li>Sauté 3/4 cup green peppers, cut  into slivers and 1/2 pound sliced mushrooms in 2 tablespoons butter until tender but not brown.</li>

<ol>
<li>Remove the skin of the ham, rub with salt and pepper on all sides and let it stand for 1 hour at room temperature before roasting.</li>
<li>Add onion stuck with cloves, carrots, celery and garlic, to the roasting pan.</li>
<li>Pour melted butter over the ham.</li>
<li>Bake in a hot oven for about 30 minutes, reduce the heat to moderately hot, continue to cook.</li>
<li>Baste the ham several times with the wine for 25 per pound until it&#8217;s well done.</li>
<li>Pour off the excess fat and add the flour to the pan while stirring well.</li>
<li>Gradually add the white stock and the brandy.</li>
<li>Cook for 5 minutes.</li>
<li>Correct the seasoning.</li>
<li>Carve the ham on a serving platter and pour half of the sauce over the slices.</li>
