<p>1. Put the cooked ham in a liquidizer or food processor</p>
<p>2. Season with salt and pepper (optional)</p>
<p>3. With a wooden spoon, work the egg whites into the mixture</p>
<p>4. Force the mixture through a fine sieve into a bowl</p>
<p>5. Set the bowl in another bowl of ice</p>
<p>6. Very gradually work in the cups of heavy cream</p>
<p>7. Fill a buttered ring mold with the mousse</p>
<p>8. Set the mold in a baking pan in an inch or two of hot but not boiling water</p>
<p>9. Bake in a moderate oven of 350F (180C) for about 45minutes or until the mousse is firm<br />
10. Remove the mold from the hot water and let it stand for a few minutes</p>
<p>11. Unmold the mousse on a serving platter and surround it with the croutons</p>
<p>12. Fill the center with conical mound of the spinach and serve</p>

Triangular croutons<br />
