<p>1. Split the salmon</p>
<p>2. Rub the salmon on both sides with salt and the olive oil</p>
<p>3. Put the salmon in a well-oiled hinged broiler</p>
<p>4. Broil the salmon with the flesh side up until it is lightly browned</p>
<p>5. Turn the salmon and cover the flesh with a mixture of the cream, lemon and parsley</p>
<p>6. Broil the salmon slowly with the skin side down for about 35minutes or until the flesh flakes easily</p>

<p>1 salmon (approximately 8 to 12 lb)<br />
Salt and pepper<br />
Olive oil<br />
1/2 cup butter<br />
Juice of 1 lemon<br />
