										<content:encoded><![CDATA[<h2>Grilled Halloumi Cheese with Mint Recipe:</h2>
<p>1. Turn the grill on medium heat</p>
<p>2. Strip the leaves from the bunch of mint</p>
<p>3. Chop enough leaves to make 2 level tablespoons of chopped mint then set it aside</p>
<p>4. Lay the mint stalks in the base of the grill pan and lay the rack over the top</p>
<p>5. Brush the rack well with cooking oil</p>
<p>6. Cut the halloumi cheese into cubes of about 25mm</p>
<p>7. Place the cheese cubes on the oiled rack and sprinkle with the half chopped mint</p>
<p>8. Place the pan under the preheated grill and cook until the cheese softens and colours slightly (do not overcook)</p>
<p>9. While the cheese is cooking, mix the remaining chopped mint with the olive oil, garlic and black pepper to taste.</p>
<p>10. To serve, spoon the grilled cheese onto small serving plates and sprinkle with the flavoured oil</p>
<p>11. Garnish with the lemon wedges and serve with warm pitta bread</p>

<p>1 bunch fresh mint<br />
Cooking oil<br />
500g Halloumi or feta cheese<br />
4 tablespoons olive oil<br />
2 cloves crushed garlic<br />
Freshly ground black pepper<br />
Wedges of lemon (garnish)</p>
