<p>1. Brush the bottom and sides of a pastry-lined pie dish with the unbeaten egg white</p>
<p>2. Cover the pastry with a layer of the sliced tomatoes</p>
<p>3. Sprinkle with a little salt, cinnamon and nutmeg</p>
<p>4. Cream the butter and the brown sugar together</p>
<p>5. Dot the above butter mixture on top of the tomatoes</p>
<p>6. Cover with a layer of the thinly sliced apples and repeat with the seasoning and the dotting of the butter mixture</p>
<p>7. Add another layer of tomatoes and 2more layers of the apples, each layer being seasoned and buttered</p>
<p>9. Round the filling in the center and pour in the cup of cider</p>
<p>10. Adjust the top crust, make a few slashes and brush it with some milk</p>
<p>11. Bake the dish in a moderate oven for about 40minutes or until the crust is delicately browned</p>
