<p>1. Cut the beef fillet into thin strips and season them with salt and pepper</p>
<p>2. Heat the salad oil in a heavy-based pan</p>
<p>3. Brown the strips in the hot oil over high heat, while constantly stirring</p>
<p>4. Add the onion, green peppers and celery</p>
<p>5. Cook the vegetables for a few minutes longer while stirring</p>
<p>6. Add the beef stock and cover the pan tightly</p>
<p>7. Cook over moderate heat for a further 10minutes or until the meat and vegetables are tender</p>
<p>8. In a cup, mix the water, cornstarch and soy sauce to make a paste</p>
<p>9. Add the paste to the cooked meat and vegetables</p>
<p>10. Cook for a few minutes longer, while constantly stirring until the liquid thickens and the mixture is very hot</p>
<p>11. Serve immediately</p>

<p>1/3 cup salad oil<br />
6 tablespoons finely minced onion<br />
1 garlic clove, finely chopped<br />
4 green peppers, finely diced<br />
Salt and pepper<br />
Cut 1 and 1/2 lb lean fillet of beef<br />
1 and 1/2 cups celery, sliced diagonally into 1/4 inch pieces<br />
1 and 1/2 cups beef stock<br />
2 tablespoons cornstarch<br />
1/4 cup water<br />
1 tablespoon soy sauce</p>
