<p>1. Grease 2 or 3 baking trays</p>
<p>2. Sift the following ingredients together in a bowl: flour, bicarbonate of soda, ginger, and cinnamon</p>
<p>3. Add the sugar to the sifted ingredients</p>
<p>4. Melt the butter in a small pan and stir in the syrup (do not let the butter boil when melting it)</p>
<p>5. Mix this into the dry ingredients using a wooden spoon</p>
<p>6. Using your hands, shape the dough into a thick sausage shape before cutting it into 24 even pieces</p>
<p>7. Roll each piece into a ball and set them well apart and slightly flatten them</p>
<p>8. Bake the cookies above the center of the preheated oven for about 15minutes or until the cookies have cracked and are golden brown</p>
<p>9. Let the cookies cool for a few minutes on a wire wrack</p>
<p>10. As soon as the cookies are cold, store them in an airtight tin</p>

<p>1 level teaspoon ground ginger<br />
2 level teaspoons caster sugar<br />
1/2 level teaspoon ground cinnamon<br />
3 oz golden syrup<br />
4 oz self-raising flour<br />
1/2 level teaspoon bicarbonate of soda<br />
2 oz butter</p>
<p>The oven should be preheated at a temperature of 375F (190C)</p>
