<p>1. Cut the chicken into 4 or 6 pieces and wipe them clean</p>
<p>2. Remove the rind from the bacon and dice it</p>
<p>3. Peel and cut the onions into thin slices</p>
<p>4. Scrub and coarsely chop the celery</p>
<p>5. Clean and slice the mushrooms</p>
<p>6. Melt the butter in a large, heavy based frying pan</p>
<p>7. Fry the bacon, onions, mushrooms and celery in the butter for 5minutes</p>
<p>8. Drain the butter from the pan</p>
<p>9. Transfer the vegetables from the pan and spread them into a large casserole dish</p>
<p>10. Fry the chicken pieces in some butter until they are golden brown</p>
<p>11. Remove the chicken pieces from the oil and place them on the bed of the vegetables</p>
<p>12. Scrape the potatoes then peel and slice the turnips</p>
<p>13. Add the potatoes,turnips, tomatoes and the bouquet garni to the casserole dish</p>
<p>14. Season the dish with salt and the ground pepper</p>
<p>15. Cover the dish with kitchen foil and then cover it with the lid</p>
<p>16. Cook on the middle shelf of the oven heated to 300F (150C) for about 1 and 1/2 hours or until tender</p>
<p>17. Mix the chopped parsley and the chopped orange rind together and sprinkle the mixture over the casserole dish and serve immediately</p>

<p>(serves 4 to 6 people)</p>
<p>1 chicken, approximately 3 lb<br />
2 oz streaky bacon<br />
2 large onions<br />
2 sticks celery<br />
1/4 lb mushrooms<br />
2 to 3 oz unsalted butter<br />
1 lb potatoes<br />
1/2 lb turnips<br />
14 or 16 oz tin of tomatoes<br />
1 bouquet garni<br />
Salt and black pepper<br />
Fresh parsley and orange rind (Garnish)</p>
