<p>1. Beat the flour, sugar and the eggs into the ricotta cheese</p>
<p>2. Stir in the grated rind of lemon, brandy and the pinch of salt</p>
<p>3. Let the mixture stand for at least 1 hour before frying</p>
<p>4. Put a fritter the size and shape of a walnut in the bowl of a long handled spoon</p>
<p>5. Hold the spoon in the hot oil for 10 seconds or until a crust forms on the fritter</p>
<p>6. Gently withdraw the spoon and put in another frittella</p>
<p>7. Sprinkle the fritelle with the confectioners&#8217; sugar and serve piping hot</p>
