<p>1. Using a scone cutter, cut 16 circles from the bread</p>
<p>2. Butter each circle</p>
<p>3. Drain the salmon and remove any skin and bone</p>
<p>4. In a mixing bowl, mash the salmon flesh with a fork</p>
<p>5. Stir in the cream cheese and the grated cheese</p>
<p>6. Season with salt and pepper</p>
<p>7. Spread the mixture thickly on half the bread circles</p>
<p>8. Top with remaining slices and sandwich firmly together</p>
<p>9. Beat the egg and milk together</p>
<p>10. Season with salt, pepper and paprika</p>
<p>11. Dip the sandwiches in the beaten egg mixture and fry them in hot oil until crisp and golden</p>
<p>12. Drain on crumpled kitchen absorbent paper and serve immediately</p>
